Yum is right. Thank you for this recipe. Off to find something suitable to cook them in. And, to adapt for toaster oven cooking. Even though this recipe is about 10 years old, its value has not diminished. That's for sure!
Would this work in a countertop convection oven? There is not much wiggle room for moving racks if the pie is deep. I need an option since I sell my pies but tracking down pans is a hassle! I would be so scared not being able to see the bottom.
Thanks for your comment. It's hard to say because I'm not familiar with your setup and so many potential variables. I would suggest testing on a limited basis, to see how things work out. That's the only way you'll know for sure. Good luck! Ken
I've made lemon meringue, black bottom, butterscotch and banana cream pies using your recipes and all came out perfectly. I use your shortening crust recipe almost exclusively and receive rave reviews. Bravo maestro!

How right you are, Pam, especially considering how often I use the jelly roll pan for slab pies. The dough tamper...check! The Martha Stewart bowl? I love mine, but not certain if they're still floating around out there, new. I'll have to see. As I said elsewhere in the comments, there will definitely need to be a "must-have" video, Part 2. Really fun video, especially because the tools are the same ones we see in class. I also like the little three-spout measuring cup, a nutmeg grinder, and my hand pie mold when it comes to pies. I have a whole other set of tools I can’t live without for cookies and cakes. Thanks!

Can someone please explain the point of putting a pie in the bag? The only thing I see it doing is keeping the oven clean
Hello my friend - Since I made the video, I guess I should be the one to answer. Clearly the bag is not essential. But there is something about the steamy bag environment that makes the pie topping extra crunchy and delectable. Not to mention the fact that it's a pretty cool thing to do and infuses the process with some drama when the pie is unveiled (un-bagged?). Think of like you would using a pie bird - they're not the least bit necessary, just a nice little twist or flourish. I hope all your pies are swell. Ken

hi from Ontario Canada i was given a food processor but the only thing there wasn't a manual with it is a kitchen aid processor and i don't know what blade is what
Hi. When you're making pie dough, use the main stainless steel chopping blade. They usually come with a plastic blade, too, but I've never used mine and it seems pretty useless. Ken

I grew up using the aluminum foil except we cut them in Long rectangular strips which was a pain. With your design I did run into a snag. The crust stayed nice and white however I used it when I made my pumpkin pies and as I was pulling the tin foil off the crust chunks of the pie head cooked on to the foil so it wasn't pretty. Maybe you could mention that in your video to alert other "Hurry and get it done" bakers. For my next 2 pies I folded the foil up on the inside of the crust to be sure the pie mix didnt stick to the foil. Which works perfectly so I'm grateful that I don't have to go back to cutting long strips of tin foil. 😊
